Today is my first day writing for SDTC, and I couldn’t be more excited! For food and I it was love at first bite and now I get to share some of that passion with all you oh-so-lovely readers.  

To kick things off, one of my favourite things: potlucks!  Potlucks are a simple and inexpensive way to get friends together. Many find entertaining daunting, but it doesn’t need to be. The easiest way to plan for success is to pick a theme to give guests help dreaming up what delicious treat they should bring. For instance, last week we had a Mexican themed potluck and dishes included: guacamole, cheesy baked burritos and a steady stream of Raspberry Mint Mojitos. Really the only thing missing was a mariachi trio and piñata!

If you really want to let your hair down at a potluck, pick a signature drink and ask each guest to bring an ingredient! This minty cool cocktail is definitely a favourite with my guests. 

Raspberry Mint Mojitos 
Makes 8 
1 – pints raspberries
2 limes, cut into 8 wedges each
16 oz white rum
8 tbsp granulated sugar
2L club soda
Fresh Mint, enough for about 4-5 leaves per glass
Ice 

1. In the bottom of each glass add 4-6 raspberries, 4 lime wedges, mint and 1 tbsp of sugar. Muddle (or crush) using a muddler or the back of a wooden spoon.
2. Top up each glass with 2oz rum, club soda and ice and stir until combined. Enjoy!
