Plump, delicious and irreplaceable, the cheesecake has brought pals together since forever. Is anything more fun or sweet than whippin’ out a surprise cheesecake during a summer hang? ABSOLUTELY NOT!

This is one of my favourite recipes because it works for every holiday and special occasion. This last weekend, I made my signature cheesecake in celebration of World Pride, coming to Toronto on June 20th. I served the cheesecake on it is own at first, but then decided to take a lil creative license and make into a parfait! I added organic strawberries and made my own whipping cream WITH A WHISK. #Likeaboss

Olga’s Cheesecake Recipe
(inspired by My Little Pony, obvi)
 
For the crust:
2 cups of crushed honey graham crackers
1 teaspoon ground cinnamon
1 pinch salt
6 tablespoons unsalted butter (softened)
 
For the filling:
4 packages (8 oz each) of Philadelphia cream cheese (room temperature)
1 cup icing sugar
2 teaspoons vanilla
1 pinch salt
1 cup sour cream
3/4 cup heavy cream
4 eggs
food colouring of your choice (between 4 and 6 colours works best)
