One of the things I look forward to most each week is spending Saturday afternoons with my mama bird. Our repertoire is diverse: we shop, we consume our weight in sushi, or we bake. Sometimes we even manage to cram in all three.

momsleyLast Saturday we decided to try to make Peanut Butter Snack Bites. A welcome departure from our usual culinary musings involving piping guns, precision and Russian cursing, these were really easy. No-bake, no-fuss! And we really enjoyed figuring out what ingredients to include as there’s a lot of room for modifications.

In addition to the staples (Kraft All Natural Smooth Peanut Butter, large rolled oats and honey) we decided to add the following:

  • Chia seeds because they’re loaded with protein, antioxidants, Omega-3 fatty acids, fiber and all the goodness.
  • Dark chocolate, because, well, chocolate. It’s also one of the best antioxidants on the planet, reduces heart disease and contains fiber and minerals. Just make sure to use the good stuff, with a high percentage of cacao and little-to-no-sugar.
  • For a little crunch and hint of saltiness to balance the sweetness we added crushed pretzels.

What you’ll need:

  1. Chihuahua adorned (or something equally precious) tote to carry your groceries home
  2. 1 cup of cut large flaked rolled oats
  3. 1/4 cup of pretzels (crushed into coarse crumbs)
  4. ½ cup of Kraft All Natural Smooth Peanut Butter
  5. ¼ cup honey
  6. ¼ cup chia seeds
  7. ¼ cup of dark chocolate shavings

Depending on your preferences, there are lots of other ingredients that you could use including cashews, almonds, dates, pumpkin seeds, flax seeds, dried cranberries, and cocoa nibs. For a Vegan option, replace honey with maple syrup or agave nectar.

Here’s how we do:

  1. Crush the pretzels (SIDENOTE: Use a meat tenderizer for stress relief) and grate the chocolate

  1. Roll mixture into 20 (1-inch) balls using 2 tablespoons for each (or a fancy utensil like this one)

I had a lot of fun making these Peanut Butter Snack Bites with my mama. From sneaking spoonfulls of peanut butter with chocolate shavings on top, to an impromptu Taylor Swift sing-along that ensued during the rollin’ stages, it was one of my favourite Saturday afternoons in recent memory. It was also nice to be able to share the fruits (or is it balls?) of my labour with pals later that night, who DEVOURED them in under an hour. Sweet, sweet success!
