Breakfast on the Go Recipe

I was asked by a reader for FAST and HEALTHY breakfast ideas that could potentially be made in advance.

This recipe is actually an adaptation of a vegetable side dish that my Mom makes for Thanksgiving and Christmas, turned into a healthy breakfast idea. The recipe is:

  • High protein (important for breakfast)
  • Gluten free
  • Dairy free

Ingredients
  • 6 eggs (preferably organic)
  • 1 small zucchini
  • 1 cup grated carrot
  • 1 green pepper
  • 1 shallot
  • ½ cup rice flour
  • 1 tsp baking powder
  • herbs of choice (I used basil and parsley)
  • salt and pepper to taste
  • 1 tbsp coconut oil
  • 10 cherry tomatoes
Instructions
  1. Preheat oven to 350F
  2. Grease muffin tin with coconut oil
  3. Shred carrot and zucchini in food processor (or by hand)
  4. Chop shallot and pepper
  5. Mix all ingredients together in a bowl
  6. Pour into muffin tins
  7. Top with cherry tomatoes
  8. Bake for 25 min or until golden brown on top
