I made this incredibly delicious, moist and dense banana bread when I decided that my rotting bananas were meant for a higher purpose than the garbage disposal. So here it is…for all you banana bread lovers out there.

You’ll need:

  • 2 over ripe bananas, mashed
  • 1 1/2 cup flour (I used whole wheat)
  • 1/2 cup applesauce
  • 1/2 cup Greek yogurt
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1/2 cup chocolate chips

What now?:

  • Pre-heat oven to 350 degrees and coat a loaf pan with cooking spray
  • In a bowl or electric mixer, cream together sugar and applesauce
  • Add eggs and mix until combined
  • In a separate bowl, whisk together flour, baking soda and salt
  • Add dry ingredients to the applesauce mixture and stir to combine
  • Add bananas, Greek yogurt and vanilla and stir until mixture is smooth
  • Add chocolate chips and stir until evenly incorporated
  • Pour into prepared baking pan and bake until a knife or toothpick inserted into the middle comes out clean, about 1 hour
  • Allow it to sit in the pan for 10 minutes, then flip onto a rack to cool
